My sister and I used to purchase these cookies from our local Costco every December and devour them over the holidays.  Now that I make them dairy-free and nut-free, they’ve become a staple in my Christmas baking and my son also gets to enjoy them!

  • Melt butter in a medium saucepan over low heat.
  • In the meantime, combine sugar, flour and salt.
  • Add dry ingredients, and whisk over heat until mixture is uniform, roughly 2 minutes.
  • Remove from heat and mix in vanilla.
  • While the mixture thickens, preheat oven to 350 F and line baking sheets with parchment paper.
  • Drop teaspoonfuls on baking sheets, 3 inches apart.
  • Bake approximately 7 minutes.
  • The cookies will spread while baking and will still be bubbling and soft when they come out. Let them dry up on the baking sheets a few minutes before transferring them to cooling racks to cool completely.
  • Enjoy as is, drizzled with chocolate, or sandwiched with a filling of your choice!
