My sister and I used to purchase these cookies from our local Costco every December and devour them over the holidays. Now that I make them dairy-free and nut-free, they’ve become a staple in my Christmas baking and my son also gets to enjoy them!

Instructions
- Melt butter in a medium saucepan over low heat.
- In the meantime, combine sugar, flour and salt.
- Add dry ingredients, and whisk over heat until mixture is uniform, roughly 2 minutes.
- Remove from heat and mix in vanilla.
- While the mixture thickens, preheat oven to 350 F and line baking sheets with parchment paper.
- Drop teaspoonfuls on baking sheets, 3 inches apart.
- Bake approximately 7 minutes.
- The cookies will spread while baking and will still be bubbling and soft when they come out. Let them dry up on the baking sheets a few minutes before transferring them to cooling racks to cool completely.
- Enjoy as is, drizzled with chocolate, or sandwiched with a filling of your choice!
