My sister and I used to purchase these cookies from our local Costco every December and devour them over the holidays.  Now that I make them dairy-free and nut-free, they’ve become a staple in my Christmas baking and my son also gets to enjoy them!

Ingredients
  • 1/2 cup Dairy-free butter of choice (I use Melt)
  • 2/3 cup Brown sugar
  • 3/4 cup Oat flour
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
Instructions
  1. Melt butter in a medium saucepan over low heat.
  2. In the meantime, combine sugar, flour and salt.
  3. Add dry ingredients, and whisk over heat until mixture is uniform, roughly 2 minutes.
  4. Remove from heat and mix in vanilla.
  5. While the mixture thickens, preheat oven to 350 F and line baking sheets with parchment paper.
  6. Drop teaspoonfuls on baking sheets, 3 inches apart.
  7. Bake approximately 7 minutes.
  8. The cookies will spread while baking and will still be bubbling and soft when they come out. Let them dry up on the baking sheets a few minutes before transferring them to cooling racks to cool completely.
  9. Enjoy as is, drizzled with chocolate, or sandwiched with a filling of your choice!
