Lemon Curd
This is a recipe my boyfriend created from various versions he found online. It makes about 1 mason jar of lemon curd.... which may be 4 servings or just 1, up to you! Enjoy with graham cookies for a sweet and crunchy complement to the smoothness and tartness of the curd.

Ingredients

cup
lemon juice

eggs
-
zest from 1 lemon

tbsp
sweetened condensed coconut milk

1-4
tbsp
maple syrup
(may use other sweetener)
Instructions

Whisk eggs, lemon juice and zest together in a medium-sized pot.

Add the sweetened condensed coconut milk. Stir well.

Slowly bring to a boil, whisking continuously.

Reduce heat, whisking until desired consistency (approximately 3-5 minutes).

Add maple syrup to taste.

Cool to room temperature before refrigerating.
