Lemon Curd

This is a recipe my boyfriend created from various versions he found online.  It makes about 1 mason jar of lemon curd.... which may be 4 servings or just 1, up to you!  Enjoy with graham cookies for a sweet and crunchy complement to the smoothness and tartness of the curd.

Ingredients
  • 1.5 cup lemon juice
  • 3 eggs
  • zest from 1 lemon
  • 6 tbsp sweetened condensed coconut milk
  • 1-4 tbsp maple syrup (may use other sweetener)
Instructions
  1. Whisk eggs, lemon juice and zest together in a medium-sized pot.
  2. Add the sweetened condensed coconut milk. Stir well.
  3. Slowly bring to a boil, whisking continuously.
  4. Reduce heat, whisking until desired consistency (approximately 3-5 minutes).
  5. Add maple syrup to taste.
  6. Cool to room temperature before refrigerating.
