Santa’s Cookies

These are a modified, small batch version of a Super Bowl Chocolate Chip Cookie recipe my mom clipped from a newspaper years ago.  We make them every Christmas for Santa.

Ingredients
  • 1 cup All-purpose flour
  • 1 cup Oat flour (You can blend rolled oats in the food processor.)
  • 1/4 cup Rolled oats
  • 1/4 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Melt
  • 1/2 cup Brown sugar
  • 1/2 cup Granulated sugar
  • 1 Egg
  • 1/2 tsp Vanilla extract
  • 1/4 cup Mini semi-sweet chocolate chips
  • 1/4 cup Dark chocolate chips
Instructions
  1. Preheat oven to 375F.
  2. In a mixing bowl, combine flours, oats, baking powder and salt.
  3. In the bowl of a food processor, cream butter.
  4. Cream sugars into butter until well blended.
  5. Mix in eggs and vanilla.
  6. Blend dry mixture into the butter mixture.
  7. Stir in chocolate chips, and any other add-in’s you want.
  8. Arrange in spoonfuls on ungreased cookie sheets, about 2 inches apart.
  9. Bake for about 8-10 minutes, until crisp. Let cool on wire racks.
