Simplest Vanilla Cupcakes

These vanilla cupcakes are super simple to put together, and can be eaten as is, or decorated with your frosting of choice.  This cupcake version uses granulated sugar, but feel free to browse over to the maple syrup version here!

Ingredients
  • 2 cup All-purpose flour
  • 1 cup Sugar
  • 1 tbsp Baking powder
  • 1/4 tsp Salt
  • 1 cup Milk of choice (See note below.)
  • 1/2 cup Olive oil (Or vegetable oil of choice.)
  • 2 Eggs
  • 1 tsp Vanilla extract
Instructions
  1. Preheat oven to 350F.
  2. In a large bowl, mix together flour, sugar, baking powder and salt.
  3. Add remaining ingredients and mix by hand or with an electric mixer until the batter is smooth.
  4. Mix in sprinkles, chocolate chips, or coconut flakes as your mood desires. :)
  5. Pour batter into lined cupcake molds.
  6. Bake for approximately 15 minutes, until slightly golden and a toothpick inserted in the center comes out clean.
  7. Let cool completely on a wire rack before eating or decorating.
Recipe Notes

* I have used soy milk, rice milk and a coconut beverage for this recipe, depending on what I had on hand and what taste I was looking to create.  All work great! * This batter can be used for an 8-inch square cake.  Adjust the baking time to approximately 50 minutes.
