This bread-like cake was one of my favorite desserts growing up. I used to love eating it toasted with a light spread of margarine. This is an adapted version of the recipe my mother used to make.

- Preheat oven to 375 F.
- In stand mixer with paddle attachment, mix together zucchini, oil, sugar and eggs until well blended.
- In a separate bowl, stir together remaining dry ingredients.
- Gradually stir dry ingredients into the zucchini mixture.
- Pour batter into 2 loaf pans lined with parchment paper.
- Bake approximately 10 minutes and then lower the temperature to 350 F for another 45-50 minutes. Let cool in pan before eating.
