Zucchini Bread
This bread-like cake was one of my favorite desserts growing up. I used to love eating it toasted with a light spread of margarine. This is an adapted version of the recipe my mother used to make.

Ingredients

Grated zucchini
(Squeeze out excess liquid)

Instructions

Preheat oven to 375 F.

In stand mixer with paddle attachment, mix together zucchini, oil, sugar and eggs until well blended.

In a separate bowl, stir together remaining dry ingredients.

Gradually stir dry ingredients into the zucchini mixture.

Pour batter into 2 loaf pans lined with parchment paper.

Bake approximately 10 minutes and then lower the temperature to 350 F for another 45-50 minutes. Let cool in pan before eating.
