Zucchini Bread

This bread-like cake was one of my favorite desserts growing up.  I used to love eating it toasted with a light spread of margarine.  This is an adapted version of the recipe my mother used to make.

Cook Time: 60 mins
Total Time: 75 mins
Ingredients
  • 500 g Grated zucchini (Squeeze out excess liquid)
  • 1 cup Olive oil
  • 1 cup Sugar
  • 3 Eggs
  • 2.5 cup Flour
  • 2.5 tsp Baking powder
  • 1.5 tsp Ground cinnamon
  • 1 tsp Ground nutmeg
  • 1 tsp Salt
Instructions
  1. Preheat oven to 375 F.
  2. In stand mixer with paddle attachment, mix together zucchini, oil, sugar and eggs until well blended.
  3. In a separate bowl, stir together remaining dry ingredients.
  4. Gradually stir dry ingredients into the zucchini mixture.
  5. Pour batter into 2 loaf pans lined with parchment paper.
  6. Bake approximately 10 minutes and then lower the temperature to 350 F for another 45-50 minutes. Let cool in pan before eating.
